Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1 ripe avocado, diced

  • ½ cup cherry tomatoes, halved

  • ¼ cup red onion, finely chopped

  • ¼ cup crumbled feta cheese

  • 2 tbsp fresh parsley, chopped

  • 2 tbsp fresh cilantro, chopped

For the Dressing

  • 3 tbsp olive oil

  • 1 tbsp fresh lemon juice

  • 1 tsp Dijon mustard

  • 1 clove garlic, minced

  • Salt and black pepper, to taste


Instructions

  • Prepare the dressing
    Whisk together olive oil, lemon juice, Dijon mustard, garlic, salt, and pepper in a small bowl.

  • Combine the salad
    In a large bowl, add chickpeas, avocado, cherry tomatoes, red onion, parsley, and cilantro.

  • Add feta
    Sprinkle the crumbled feta over the salad.

  • Toss with dressing
    Pour the dressing over the salad and gently toss to coat all ingredients evenly.

  • Serve
    Serve immediately as a light lunch or chilled for later.
