Ingredients
For the Sausage and Potatoes:
-
Sausage: 1 lb (450g) of your favorite sausage, sliced into 1-inch pieces.
-
Sweet Potatoes: 2 medium, peeled and cut into 1-inch cubes.
-
Olive Oil: 2 tablespoons for roasting and flavor.
-
Salt & Pepper: To taste.
For the Honey Garlic Sauce:
-
Honey: 1/4 cup for natural sweetness.
-
Garlic: 4 cloves, minced to create aromatic depth.
-
Soy Sauce: 2 tablespoons for savory balance.
-
Apple Cider Vinegar: 1 tablespoon for tang.
-
Red Pepper Flakes: Optional, for a subtle heat.
Instructions
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup. Toss the cubed sweet potatoes with olive oil, salt, and pepper. Spread evenly to ensure even roasting.
Place the sweet potatoes in the oven for 15 minutes. Roasting first allows them to become tender while creating a slightly caramelized exterior.
While the sweet potatoes roast, heat a skillet over medium heat. Add the sausage slices and cook until browned and cooked through, about 6–8 minutes. Remove and set aside.
In the same skillet, combine honey, minced garlic, soy sauce, apple cider vinegar, and red pepper flakes. Cook for 2–3 minutes until fragrant and slightly thickened.
Add the roasted sweet potatoes and cooked sausage to the skillet. Toss gently to coat all pieces evenly with the honey garlic sauce.
Transfer everything back to the baking sheet and bake for an additional 5–7 minutes to allow the flavors to meld. Serve hot and garnish with fresh parsley if desired.
Notes
-
For extra flavor, sprinkle chopped fresh parsley or thyme on top before serving.
-
Adjust the honey in the sauce to taste, depending on your preference for sweetness.
-
If using plant-based sausage, cook slightly longer to achieve a golden crust.
-
This dish reheats well in a skillet or oven—avoid microwaving to maintain the crisp texture.
-
For added variety, toss in additional vegetables like bell peppers, zucchini, or Brussels sprouts.
